Octopus à Lagareiro

With Sweet Potato

Ingredients

1 Reymar octopus 800g/900g

1 onion

Olive oil

Thyme to taste

2 cloves of garlic

4 sweet potatoes

Salt & pepper to taste

Octopus à Lagareiro

Start by dicing the sweet potatoes and boil them for 20 minutes.

While we're waiting, line the bottom of a roasting tin with olive oil and plenty of sliced garlic (about 4 slices).

Add thyme and the previously cooked Reymar octopus.

Drizzle with more olive oil and bake for 30 minutes at 180 degrees.

Use a hand blender to blend the potatoes and add a drizzle of olive oil until you get a velvety cream.

Finally, plate it up and drizzle it with the sauce from the roasting pan.
